Garlicky Kale (Whole Foods Copycat)
If you’ve ever had the famous Garlicky Kale from the Whole Foods deli, you know this isn’t your ordinary kale salad. If it was, I wouldn’t be craving it, writing about it or frankly—eating it.
The key is to break your kale leaves up into bite-size pieces. And the second key is to massage this dressing in. It will allow each piece to be fully covered aka smothered in this deliciousness, but it also breaks the kale up so it’s more bio-available and easier to digest. Here’s how you make it:
INGREDIENTS
1 bunch of curly green kale, stemmed and broken into bite-size pieces
2 tbl tamari/soy sauce/coconut aminos
2 tbl tahini
2 tbl apple cider vin
2 tbl lemon juice
4 garlic cloves minced
4 tbl nutritional yeast
pinch black pepper
Mix the above ingredients (excluding kale) with a spoon or a blender. Making sure to get all the clumps out of the tahini. The dressing with feel more like a spread than a loose dressing.
Pour half the mixture on the kale in a salad bowl and use your hands to massage the dressing into the kale, until it is well-incorporated and the kale becomes less stiff. Add more dressing as you please! Optional to top with additional nutritional yeast, salt, pepper or a squeeze of lemon. Eat right away or store in the fridge until you are ready to eat it—can sit for up to 24 hours.
