Waffle Perogies
This is less of a recipe and more of a great (glutinous) idea—
1 pkg perogies
4 tbl coconut plain yogurt (we used local Yoggu brand)
1/2 cup cheese (we used Daiya cheddar)
1 shallot, sliced
salt
papper
Boil the perogies until soft and cooked through.
Meanwhile, heat olive oil on medium heat and add sliced shallot. Sautee until caramelized, stirring often. Set aside!
Spray waffle pan and strategically place boiled and drained perogies on waffle pan. Cook for 5 minutes then sprinkle cheese on top and cook for 5 more minutes or until you reach desired crunchiness.
Divide onto plates and top with yogurt, shallots and salt, pepper. Enjoy!!
